When you know you're going to be gone from class, it is easy enough to write out plans for a substitute teacher. Usually, these plans just continue with what you've been studying in class. However, there are times when you are unexpectedly absent. For these instances, have a plan ready for each day of the week. Have these plans in a folder labelled "Substitute Teaching Plans" that is visible on your desk or in an easy-to-find place. One idea that works really well for substitutes is to make a one-day Thematic Unit, where everything is centered around a specific subject.
